Vegetable Egg Fried Rice



Fried rice, and any stir fries, are the perfect plastic free meal because they are so easy to adapt. This recipe is how I like to make my egg fried rice but really you take out or add any ingredients that you want. It’s perfect for zero plastic people who are sick of having to find substitutes all time, for this substitutes are encouraged!




1. Start by cooking the rice. Cooking for 10-12 minutes using the 1:2 ratio, 1 cup of rice for two cups of water, stirring occasionally to prevent sticking to the pot. Or cooking using your preferred method. While the rice is cooking, chop up all the other ingredients to desired size. At this point I also stream the broccoli until it is half cooked.




2. Heat a bit of oil in a wok or large non-stick pan, on a medium/low heat, I like to use sesame oil. Then add the onion and garlic and let cook for about two minutes. Push the onion and garlic to the edges of the pan and add three eggs into the centre of the pan. Very quickly start scrambling the eggs with a wooden spoon. Before the eggs are fully cooked add the rice to the pan and mix everything together.








3. After a few minutes, then add your vegetables of choice, I am using broccoli and peppers. Drizzle on some more oil and then mix everything together. Cook for a further 2-3 minutes, while stirring.







4. Then add desired amount of soy sauce and any other seasoning, salt, pepper, red chilli flakes, etc. Stirring until the soy sauce is fully mixed in. Take off heat and serve.
